Cold rice, as you can easily read by googling here and there, is a typically summer dish of Italian cuisine, consisting of rice and other different ingredients mixed together, seasoned in a variable manner. My favorite solution is with basmati rice, tuna, anchovies, olives, capers, giardiniera, a pinch of extra virgin olive oil, tomatoes, mozzarella, salt and a mountain of oregano.

Ingredients
A dish of Basmati rice – A box of tuna preserved in extra virgin olive oil – Two anchovy fillets preserved in extra virgin olive oil – A handful of pickled capers – A handful of fresh olives – Abundant oregano – 4 fresh Piccadilly tomatoes cut in 4 parts each one – A fresh mozzarella cut in several tiny slices – A bit of Giardiniera, that is a versatile Italian condiment that includes bell peppers, celery, carrots, cauliflower and gherkinks. These pickled vegetables are to be marinated in oil, red- or white-wine vinegar, herbs and spices.
Tools
A normal pot for boiling the rice and a bowl to put it into are enough.
Steps
Boiling the rice, then put it into the bowl and let it rest for 5-10 minutes.
Add all the ingredients, mix and finally put in the refrigerator.
The plate is to be served cold.
